Carne Asada and Avocado Salad Recipe

1 cup soy sauce

1 cup fresh lime juice

1/4 cup dark brown sugar

1/2 Tbls. ground cumin

1/2 Tbls. ground coriander

1/4 head crushed garlic

1 bunch scallions

1 sliced jalapeno

2 lbs. skirt steak

3 large avocados, diced

1 pint cherry tomatoes, halved

1 cucumber, diced

1 shallot, diced

1 bunch cilantro

1 lime, juiced

2 Tbls. olive oil

salt and pepper to taste

Combine soy sauce, lime juice, brown sugar, cumin, coriander, crushed garlic, scallions, and slices jalapeno in a medium sized mixing bowl. Add skirt steak and marinate over night.

Mix avocados, cherry tomatoes, cucumber, shallot, cilantro, lime juice, and olive oil. Season with salt and pepper. Set aside.

Grill skirt steak two minutes per side for medium, let rest, and then slice.

Portion the salad equally onto four plates, and serve skirt steak fanned out on plate.
